Vinification and aging:

The grapes for red wine Ornellaia 2003 were hand picked in boxes of 15 Kg.The alcoholic fermentation took place partly in wooden vats and partly in stainless steel tanks at a temperature not exceeding 30 ° C. Each variety and each plot was refined.The maceration lasted for 25-30 days after which the wine was racked into French oak barrels (70% new French oak barrels, 30% second passage barriques) where he completed malolactic fermentation. The aging wine in oak barrels lasted for a total of 18 months in temperature-controlled cellar at the Estate.
