PRODUCTION AREA
Municipality of Andria in the area D.O.C. Castel del Monte.
VARIETY
100% Nero di Troia small-berry result of clonal selection made in the ’90s by Rivera in their vineyards.
VINEYARD
Tafuri farmed vineyard in the district to cordon system with a density of 4,800 plants per hectare on calcareous tufa-deep at 250 meters above sea level. The yield is 50-60 quintals per hectare.
WINE
The harvest takes place between the last week of October and early November. Maceration in stainless steel is prolonged to 20 days in order to obtain the maximum extraction of aroma and color. Delestage, pumping and careful micro allow to soften the tannic impressive outfit.
AGING
After fermentation, the wine is transferred into new French oak barrels where it remains for 14 months and where malolactic fermentation. Do not refrigerate or filtered, the wine is aged for 9 months in bottle before release.
ANALYTICAL DATA
Alcohol 13.5%, total acidity 5.70 g / l, pH 3.45; residual sugar 2 g / l; extracts 34 g / l; S02 total 85 mg / l.
TASTING NOTES
Intense purplish red, impenetrable, intense and fresh aroma of black fruit, violets and star anise; in the mouth speaks with great denseness and body, along with a palate of spicy black fruit, tannins, the finish has thick but soft.
SERVING
The great strength and denseness of this wine, combined with its modern cut, make it suitable for foods rich in flavors and with a good set of fat such as red meat roasts, game bag, meat-based sauces strong and cheeses. Serve at 18 ° -20 ° C, after allowing to breathe.
CONSERVATION
Thanks to its large structure, if stored correctly Puer Apuliae can successfully evolve in bottle for 12-15 years.
